One carbon metabolism describes a series of metabolic reactions in our body, and Vegard Lysne has studied how dietary habits influence these metabolic processes.

(1) Rats fed a high-fat diet with components that activate the Peroxisome Proliferator-Activated Receptor (PPARα) had increased plasma levels of dimetylglycine. Dimetylglycine has previously been linked to increased risk of cardiovascular disease. PPARα activation also increased vitamin B3 levels, as well as methylnicotinamide, methylmalonic acid and pyridoxal.
The study includes 30 rats fed for one year with either a high-fat control diet or a high-fat diet with the PPARα-activating tetradecylthioacetic acid.
(2) PPAR-activating diets reduce the levels of free total and saturated fatty acids in the heart. The diets also increase liver mass relative to body weight and reduce plasma and hepatic cholesterol levels. The effects seem to differ somewhat depending on PPARα or PPARγ activation.
Twelve rats (six in each group) were fed low-fat diets with specific PPAR agonists for 12 days. Both groups were compared with eight rats receiving the same diet with placebo.
(3) Protein intake and fatty acid composition appear to influence one carbon metabolism in patients with coronary artery disease. Lysne and co-workers have studied the association between self-reported diet and biomarkers of one carbon metabolism in more than 2000 heart patients.
